Who orders chicken cashew nut?
Seriously. Out of all the dishes on a Thai menu, when has anyone looked through the endless list of curries, stir-fries, and noodles and thought, "Yep, chicken cashew nut. That's the one."
Probably not many people.
But let me tell you something. During my trip to Thailand in February 2026, I discovered what I genuinely believe is the best chicken cashew nut in the world.
And no, I'm not talking about some Michelin-starred restaurant in Bangkok or a famous restaurant that everyone lines up for.
This came from a humble restaurant inside a mountain resort in a place we almost didn't even visit.
The funny thing is, this wasn't even a dish I was looking forward to trying. It wasn't on my Thailand food bucket list. It wasn't something I researched beforehand.
It just happened.
And somehow, this random plate of chicken cashew nut became one of my favorite memories from Thailand.
But to understand why, you need to know how we ended up in Khao Sok.
The Unexpected Detour: Khao Sok
For two weeks, we explored Thailand. Like most first-time visitors, our original itinerary was pretty straightforward:
Bangkok. Chiang Mai. Phuket.
Three cities. Simple enough.
Then, naturally, I fell down the rabbit hole of travel research.
The more I looked into Thailand, the more I kept seeing photos of Khao Sok National Park.
Towering limestone mountains covered in jungle. Emerald-green lakes. Rivers winding through dramatic cliffs.
It looked like something straight out of Jurassic Park.
We figured if we were already traveling through southern Thailand, we couldn't skip it.
Looking back, adding Khao Sok was one of the best decisions we made.
The Journey From Phuket to Khao Sok
Getting there, however, was an adventure by itself.
We tried booking an Uber from Phuket, but every driver either declined or cancelled once they realized we were heading to Khao Sok.
Apparently, it was just too far.
Eventually, we gave up and thankfully our hotel in Phuket was able to arrange a private van for us.
Honestly, I'm glad the Ubers never worked out.

The drive ended up being one of my favorite parts of the trip.
As we left Phuket behind, the scenery completely changed. The busy streets and beaches slowly disappeared, replaced by winding roads, small villages, towering limestone cliffs, and endless greenery.
Every mile felt like we were getting further away from the Thailand most tourists see.
It felt like we were discovering a completely different side of the country.
After a few hours on the road, we finally arrived at Magical Mountain Resort around 5 PM.

The name sounds like something you'd make up, but it honestly lived up to it.
Surrounded by mountains and lush greenery, the resort had this peaceful, almost hidden-away feeling.
After spending time in Bangkok and Phuket, where everything was energetic and constantly moving, Khao Sok felt like someone had pressed pause.
No traffic.
No crowds.

After the long drive, we were tired and honestly just wanted a good meal.
We weren't expecting anything extraordinary. It was more of a "we're hungry, let's eat here" kind of decision.
Then my friend ordered the chicken cashew nut.
I remember thinking:
"Really? Out of everything on the menu?"
Five minutes later, I was eating my words.
The Dish That Ruined Chicken Cashew Nut Forever
This wasn't the sweet chicken cashew nut I was used to ordering back home.
You know the one—covered in a sugary sauce that's almost closer to sweet chili than anything else.
This version was unapologetically savory.
And somehow, that made the roasted cashew flavor shine even more.
The sauce wasn't trying to overpower the dish. The cashews weren't just a topping thrown on at the end.
They were the star.
Every bite had this deep, savory flavor that somehow made the chicken taste even better.
It was simple, but it was unforgettable.
One bite in, the conversation at our table pretty much stopped.
Everyone was just eating.
And honestly, that's usually how you know a dish is good.

Little did I know, we weren't done with it yet.
Waking Up in Khao Sok
The next morning, we finally got to experience why Khao Sok had been worth the detour.
After breakfast, we headed out for one of the highlights of our stay: bamboo rafting through the jungle.
The best view.
Now, when you hear "bamboo rafting," you might imagine something adventurous—racing through rapids or holding on for dear life.
Thankfully, it was nothing like that.
It was the complete opposite.
Slow.
Quiet.
Peaceful.
I mean look at that!
Sitting on a bamboo raft while drifting through the river, surrounded by towering limestone cliffs and thick jungle on both sides, felt like one of those rare travel moments where you stop thinking about what comes next and just enjoy where you are.

The sounds of the jungle, the cool breeze, and the peaceful surroundings made it feel like we had stepped into another world.

Yes, We Ordered It Again
After spending the morning surrounded by some of the most beautiful scenery in Thailand, we headed back to Magical Mountain Resort for lunch.
And yes.
We ordered the chicken cashew nut again.
We only spent two nights at the resort, and somehow this dish became important enough that we had to have it twice.
Same dish.
Same place.
Zero regrets.
At that point, I knew this wasn't just a really good meal.
This was becoming one of those random travel memories that sticks with you.
